Antioxidident & Delicious!




This sweet yet savory compote is high in invaluable antioxidants and therefore exceptionally healthful. But first things first, it tastes delicious and is quick and easy to make. Purple or red grapes will yield a stellar purple or red color.

 

2 cups (about ¾ pound) organic grapes with seeds

1/4 cup fresh orange or apple juice, or water

1 apple, cored and cut into chunks

1/2 cup raisins or currants

1/2 cup chopped walnuts

1/4 cup honey

1/4 teaspoon cayenne pepper

1 teaspoon minced ginger

1/8 teaspoon sea salt

juice from 1/2 lemon juice

 

Place the grapes, juice (or water) in a blender and blend until smooth. Place grape puree, apples, raisins, walnuts, honey, cayenne, ginger and sea salt in a small saucepan over medium heat. Bring to a boil. Lower heat and simmer for 15 minutes, stirring occasionally, or until the juice is thick and the apples are soft. Stir in lemon juice. Remove from heat and serve warm or at room temperature. Covered and refrigerated, it keeps for 5 days. Serves 4.
