Rose Cardamom Lassi

Ingredient List

1 Qt. Whole Milk Yogurt with live cultures
ground cardoman
honey
spring or filtered water
rose water*

Dump out the yogurt from the container into a large bowl, large enough to hold double the volume of the yogurt. Fill the container full of your filtered water and slowly whisk into the bowl of yogurt, using just about 1/3 of the water at first. Then add about 1/4 c. of honey  into the mixture, whisking it in, then add your 1/2 tsp.of ground cardoman and about 1-2 tsp. of rose water. Whisk this thoroughly to combine. Then add the rest of the water, whisking all the time until you have a smooth mixture. Taste and adjust seasonings and honey as needed. This will stay fresh in a glass container (I like to use a two quart mason jar for this) for up to a week. Serve in a beautiful glass and enjoy!

This has become our favorite lassi recipe, inspired by Dr. Vasant Lad,  an Ayurvedic physician, ever since we learned that mixing yogurt (or any dairy) with fruit creates ‘ama’ which is a bodily toxin “produced by poor metabolism. Bad food combining can be one of the factors.” (from Ayurvedic Cooking for Self Healing, second edition by Usha Lad & Dr. Vasant Lad). Ayurveda is the ancient Indian system of life, health, and principles of balance.

At Dr. Lad’s website, you can get lots of information about Ayurveda, learn about the doshas (body types), get a couple of helpful healing recipes, such as agni tea, to help your digestive fire.          

A delicious recipe for healing kitchari, when your digestion is overwhelmed or you are trying to recover from an illness, there is a downloadable pdf file for proper food combining and you can print out a beautiful meditation, called the Empty Bowl. * Rose Water: make sure this is food grade rose water without any preservatives, which you can generally find in Middle Eastern, Indian or health food markets.
